Lemon Crinkle Cookies

Ingredients

  • 1/2 cup Butter room temperature
  • 1 cup Sugar
  • 1/2 tsp Vanilla Extract
  • 1 Egg
  • 1 tsp Lemon Zest
  • 1 tbl Lemon Juice
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 1 1/2 cup Flour
  • 1/2 cup Powdered Sugar

Instructions

  • Preheat oven to 350 degrees.
  • In a medium mixing bowl, whisk together salt, baking powder, baking soda and flour.
  • Cream together the sugar and butter until light and fluffy.
  • Add in the vanilla, egg, lemon zest and lemon juice. Mix until well combined.
  • Add in the flour mixture and combine.
  • Place powdered sugar in a small mixing bowl. Use a cookie scoop and drop cookies into powder sugar and completely cover.
  • Place cookie balls onto parchment lined cookie sheets. Gently press down to slightly flatten them.
  • Bake for about 12 minutes or until they look just done in the center. (Will look a little glossy in center but will continue baking once out of the oven.)
