S'more Bars

Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 3/4 cup brown sugar packed
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs 1 sleeve
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup marshmallow creme Fluff
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup mini-marshmallows

Instructions
 

  • Preheat oven to 350℉. Line and grease a 9x9 dish.
  • Whisk together all-purpose flour, graham cracker crumbs, baking powder and salt. Set aside.
  • In a stand mixer, mix together the butter and brown sugar. Mix until lighter and fluffy. Then add in vanilla extract and egg. Mix until combined.
  • Slowly add the dry ingredients on a low setting. Mix until just combined.
  • Press about 2/3 of the mixture into the bottom of the prepared 9x9 dish.
  • Spread the marshmallow creme on top of the bottom layer. (I use the back of a spoon and spray it with pam to keep it from sticking.)
  • Sprinkle the half the chocolate chips and al the mini-marshmallows onto of the marshmallow creme.
  • Take small chunks of the left over 1/3 graham cracker mixture and flatten them in your palm and lay them on top of the layers, leaving some of the below layers exposed. Sprinkle the remaining chocolate chips on top.
  • Bake for about 25 minutes, or until the exposed marshmallows turn golden brown. Let cool completely before cutting into it.
