Preheat oven to 350 degrees. Line baking sheet with parchment paper.
In a medium bowl whisk together flour, oats, baking soda and salt.
In a large bowl, either in a stand mixer or with a hand mixer, combine the melted coconut oil and brown sugar until smooth. brown.
Add egg, egg yolk and vanilla. Mix until well combined.
Add dry mixture to bowl and mix until well combined. Fold in the coconut and chocolate chips.
Use a cookie scoop and drop about 2 inches apart on prepared baking sheet.
Bake 9-12 minutes or until edges are just beginning to turn golden brown.
