Coconut Oatmeal Chocolate Chip Cookies


  • 1 1/4 cup all-purpose flour
  • 1 cup quick oats or regular roller oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup melted coconut oil cooled
  • 1 cup dark brown sugar
  • 1 egg & 1 egg yolk room temperature
  • 1 tsp vanilla extract
  • 1 cup shredded sweetened coconut
  • 1/2 cup dark chocolate chips


  • Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  • In a medium bowl whisk together flour, oats, baking soda and salt.
  • In a large bowl, either in a stand mixer or with a hand mixer, combine the melted coconut oil and brown sugar until smooth. brown.
  • Add egg, egg yolk and vanilla. Mix until well combined.
  • Add dry mixture to bowl and mix until well combined. Fold in the coconut and chocolate chips.
  • Use a cookie scoop and drop about 2 inches apart on prepared baking sheet.
  • Bake 9-12 minutes or until edges are just beginning to turn golden brown.
